Apples are great! Cupcakes are great! Put them together and you get greatness! Today I want to share with you Food Networks Easy Baking apple spice cupcakes!
For the cupcakes:
- 1 ¼ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon allspice
- 1 stick unsalted butter, melted
- ½ cup granulated sugar
- ½ cup packed light brown sugar
- ½ cup sour cream
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 green apple, peeled and grated
For the frosting:
- 1 ½ sticks (12 tablespoons) unsalted butter
- 3 cups confectioners’ sugar
- Pinch of salt
- 2 teaspoons pure vanilla extract
- ½ teaspoon apple pie spice, plus more for sprinkling
- 2 tablespoons milk
- Apple chips for topping
Directions for cupcakes:
- Preheat the oven to 350 degrees
- Line a 12 – cup muffin pan with paper or foil liners
- Whisk the flour, baking powder, baking soda, salt, cinnamon, ginger, and allspice in a small bowl
- Beat the butter, granulated sugar, light brown sugar, sour cream, eggs and vanilla in a large bowl until smooth; stir in the apple and then stir in the dry ingredients until just combined
- Divide the batter among the prepared muffin cups
- Bake until the tops spring back when pressed, about 18 to 20 minutes
- Transfer to a rack and let cool for 5 minutes then remove the cupcakes and let them cool completely
Directions for frosting:
- Beat the butter, confectioners’ sugar and salt in a bowl with a mixer on medium speed until just combined
- Add the vanilla and apple pie spice and beat until cream, 3 minutes
- Beat in the milk until fluffy, 1 more minute
- Pipe or spread the frosting on the cupcakes and spring with apple pie spice and top with apple chips.
Tips & Tricks
- To make sure that the cupcakes cook evenly, pour the same amount of batter into each cupcake tin
- Use an ice cream scooper to pour the batter into the tins, this will be cleaner than trying to pour from the bowl and it will allow for the batter to come out more evenly when placed into the tins
