Easy Baking – Nutty Sandwich Cookies

Who doesn’t love freshly baked cookies from time to time? Today I bring to you a recipe from Food Networks Easy Baking magazine, that recipe is Nutty Sandwich Cookies!

You will need:

  • ¾ cup pistachios, almonds, pecans, peanuts, or hazelnuts, plus more for topping (optional)
  • ½ cup confectioners’ sugar
  • ¼ cup of granulated sugar
  • 1 cup all-purpose flour
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 stick of unsalted butter, at room temperature
  • Course, raw, sanding or brown sugar, for topping
  • Jam, chocolate-hazelnut spread, frosting or melted chocolate for filling

Directions:

  1. Preheat the oven to 325 degrees and line 2 baking sheets with parchment paper
  2. Pulse the nuts, confectioners’ sugar and granulated sugar in a food processor until finely ground
  3. Pulse in the flour, cinnamon, and salt until combined
  4. Pulse in the butter to form a soft dough
  5. Roll heaping teaspoons of dough into balls and arrange 1 ½ inches apart on prepared pans then lightly flatten each ball with your finger and sprinkle with coarse, raw, sanding or brown sugar. Finally press a whole nut or chopped nuts into the top of some of the cookies, if desired
  6. Bake the cookies until lightly golden, about 15 minutes and let cool for 3 minutes on the pans then remove to racks to cool completely
  7. Spread your cookies with filling of choice on flat side of the cookie and form a sandwich

Tips & Tricks

  • Don’t be afraid to try different jams and fillings, change it up to have fun and have different tastes
