Hello there! It’s been quite a while since I’ve posted a blog post to do with my Food Network Easy Baking magazine. I thought today would be a great day to bring that back because quite a few people seemed to enjoy the recipes from this magazine. Once again, I want to mention that these are not my own recipes; I’m getting them from a Food Network magazine. Today’s recipe is Salted Pretzel- Marshmallow Bars, look below for the ingredients and instructions.
The bars:
- Cooking spray
- 1 ½ cups broken pretzel pieces
- 1 ¼ cups all-purpose flour
- 1 ½ teaspoons baking powder
- 1 teaspoon salt
- 1 stick unsalted butter
- 1 ½ cups packed light brown sugar
- 2 large eggs, lightly beaten
- 2 teaspoons pure vanilla extract
For the topping:
- 8 marshmallows, halved diagonally
- ¼ cup peanut butter chips
- 1 teaspoon vegetable oil
- ¼ cup semisweet chocolate chips
Instructions for bars:
- Preheat the oven to 350 degrees with the rack in the middle of the oven
- Line a 9-inch square baking pan with foil, make sure to leave a 2 inch overhang on all sides
- Lightly spray the foil with cooking spray
- Pulse 1 cup of pretzels in a food processor until finely ground and then transfer to a bowl then whisk in the flour, baking powder and salt
- In a medium saucepan over medium heat, melt butter then remove from the heat and stir in the brown sugar and let cool slightly
- Once the butter sugar mix is slightly cooled, stir in the eggs and vanilla then stir the pretzel mixture into the butter mix by placing half the pretzel mix at a time
- Spread the batter in the pan and scatter the remaining ½ cup of pretzels on top
- Bake until golden for about 25-30 minutes
- Let cool completely on a rack then lift out and transfer onto a baking sheet
Instructions for topping:
- Preheat a broiler and press the marshmallow halves cut side down in even rows on top of the square, broil rotating the baking sheet as needed until the marshmallows are golden brown 1-2 minutes then let cool
- In a microwave safe bowl, place the peanut butter chips and ½ teaspoon of vegetable oil and melt in 30-second intervals, stirring until smooth. Repeat with the chocolate chips and remaining ½ vegetable oil
- Drizzle the melted peanut butter and chocolate mixtures over the square
- Let harden at room temperate or refrigerate before cutting
Tips & Tricks:
- The bars will be done once you can place a toothpick in the center and it comes out clean
- Broilers can be quite intense so keep a close eye on them
- Make sure to stir in 30 second intervals when melting in the microwave or the mixture can burn or melt unevenly
