Easy Baking – Classic Lemon Bars

Ready for yet another Easy Baking recipe from the Food Network Easy Baking magazine? I’ve got it for you here today! Today our recipe is Classic Lemon Bars

For the Crust:

  • For the pan you’ll need vegetable oil
  • 1 1/2 stick of cold unsalted butter; diced
  • 2 cups of all- purpose flour
  • 1/4 cup packed light brown sugar
  • 1/4 cup confectioners’ sugar
  • 1/4 teaspoon salt

For the Filling:

  • 4 large eggs plus 2 egg yolks
  • 2 cups of granulated sugar
  • 1/3 cup all-purpose flour
  • 1 teaspoon grated lemon zest
  • 1 cup fresh lemon juice (about 8 lemons)

Directions for Crust:

  1. Position rack in the middle of the oven and preheat it to 350 degrees
  2. Brush a 9 by 13 inch pan with vegetable oil and line it with foil, leaving a 2 inch overhang on the sides, oil the foil
  3. In a food processor, pulse the butter, flour, brown sugar, salt and confectioners’ sugar until the dough is in a ball (1 minute)
  4. Press the dough evenly on the prepared pan leaving about 1/2 inch up the sides
  5. Bake the crust until golden (25 minutes)

Directions for Filling:

  1. Set oven temperature to 300
  2. in a bowl whisk the whole eggs and yolks, granulated sugar and flour until the mixture becomes smooth
  3. Whisk in the lemon zest & juice
  4. Pour the filling over the warm crust and baking until set (30-35 minutes)
  5. Let the bars cool then refrigerate until firm (2 hours)
  6. Lift the foil out of the pan, cut into squares and dust with confectioners’ sugar

  1. I used to love the Starbucks lemon bars, but they don’t do them over here anymore. Tried making them myself once but the Starbucks once were better. So I’m definitely going to try this recipe!
