Easy Baking – Carrot Coconut Bread

Another week, another recipe! Today’s recipe brought to you by Food Network’s Easy Baking magazine is carrot coconut Bread!

You will need:

  • Cooking spray
  • 1 1/2 cups all purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup golden raisins
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon pinch of salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg
  • 1 cup shredded carrots (about 2)
  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 ounces cream cheese, softened
  • 3 tablespoons milk
  • 2 tablespoons confectioners sugar

Directions:

  1. Preheat oven to 350
  2. Line a 9 by 5 inch loaf pan with parchment paper, leave overhang on two sides, coat with cooking spray
  3. Whisk flour, sugar, coconut, raisins, baking powder, cinnamon, salt, baking soda and nutmeg in a large bowl.
  4. In a medium bowl, whisk carrots, vegetable oil, yogurt, eggs and vanilla then fold in the dry ingredients
  5. Put the mixture into the pan and bake for 55 to 65 minutes, let cool for an hour then remove from pan
  6. Whisk the cream cheese, milk, confectioners sugar, pinch of salt then drizzle the glaze over the bread
