Another week, another recipe! Today’s recipe brought to you by Food Network’s Easy Baking magazine is carrot coconut Bread!
You will need:
- Cooking spray
- 1 1/2 cups all purpose flour
- 3/4 cup granulated sugar
- 1/2 cup shredded sweetened coconut
- 1/2 cup golden raisins
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon pinch of salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon ground nutmeg
- 1 cup shredded carrots (about 2)
- 1/2 cup vegetable oil
- 1/2 cup plain yogurt
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 ounces cream cheese, softened
- 3 tablespoons milk
- 2 tablespoons confectioners sugar
Directions:
- Preheat oven to 350
- Line a 9 by 5 inch loaf pan with parchment paper, leave overhang on two sides, coat with cooking spray
- Whisk flour, sugar, coconut, raisins, baking powder, cinnamon, salt, baking soda and nutmeg in a large bowl.
- In a medium bowl, whisk carrots, vegetable oil, yogurt, eggs and vanilla then fold in the dry ingredients
- Put the mixture into the pan and bake for 55 to 65 minutes, let cool for an hour then remove from pan
- Whisk the cream cheese, milk, confectioners sugar, pinch of salt then drizzle the glaze over the bread
