Easy Baking – Muffins

Craving something sweet? I’ve got just the thing for you from Food Network’s magazine Easy Baking! Today’s recipe will be Snickerdoodle Muffins.

Ingredients:
For the Crumble:

  • 2/3 cup of sugar
  • 1/3 cup all purpose flour
  • 1 tablespoon ground cinnamon
  • 4 tablespoons unsalted butter (room temperature

For the Muffins:

  • 2 cups all purpose flour
  • 1 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon of salt
  • 1/4 teaspoon baking soda
  • 3 eggs
  • 3/4 cup of sugar
  • 1 stick of unsalted butter (melted)
  • 1 cup sour cream
  • 1 teaspoon pure vanilla extract

Directions:

  1. Preheat oven to 350 and line 12 cup muffin pans with liners, coat liners with cooking spray
  2. Starting with the crumble, mix the sugar, flour and cinnamon in a bowl and mash in the butter then set aside
  3. For the muffins, whisk the flour, baking powder, cinnamon, salt and baking soda in a large bowl
  4. In a separate bowl mix the eggs, sugar, melted butter, sour cream and vanilla extract then add the mixture to the dry ingredients
  5. Stir 1/2 cup of the cinnamon crumble into the batter
  6. Pour the mixture into muffin liners about 2/3 of the way and then top with the cinnamon crumble
  7. Bake for 25 – 28 minutes
  8. Let cool and enjoy
