Craving something sweet? I’ve got just the thing for you from Food Network’s magazine Easy Baking! Today’s recipe will be Snickerdoodle Muffins.
Ingredients:
For the Crumble:
- 2/3 cup of sugar
- 1/3 cup all purpose flour
- 1 tablespoon ground cinnamon
- 4 tablespoons unsalted butter (room temperature
For the Muffins:
- 2 cups all purpose flour
- 1 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon of salt
- 1/4 teaspoon baking soda
- 3 eggs
- 3/4 cup of sugar
- 1 stick of unsalted butter (melted)
- 1 cup sour cream
- 1 teaspoon pure vanilla extract
Directions:
- Preheat oven to 350 and line 12 cup muffin pans with liners, coat liners with cooking spray
- Starting with the crumble, mix the sugar, flour and cinnamon in a bowl and mash in the butter then set aside
- For the muffins, whisk the flour, baking powder, cinnamon, salt and baking soda in a large bowl
- In a separate bowl mix the eggs, sugar, melted butter, sour cream and vanilla extract then add the mixture to the dry ingredients
- Stir 1/2 cup of the cinnamon crumble into the batter
- Pour the mixture into muffin liners about 2/3 of the way and then top with the cinnamon crumble
- Bake for 25 – 28 minutes
- Let cool and enjoy
