As much as I love to be healthy, I have to admit I have a huge sweet tooth and do enjoy my baked goods. I can’t tell you I’ve ever tried to come up with my own baking recipes, but what I can tell you is that I’ve been gifted a Food Network magazine that has 125 recipes. However, that isn’t the best part, the best part is that these recipes are easy to follow! I’ve decided that every now and then I will share one of the recipes from the magazine that I’ve tried to make and absolutely loved! Hope you enjoy today’s pick which is Triple Chocolate Cupcakes! Yummmm!
Triple Chocolate Cupcakes
For the Cupcakes:
1 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup milk
1/2 cup unsweetened cocoa powder
1 cup sugar
3/4 cup vegetable oil
1 large egg
1 teaspoon pure vanilla extract
3/4 cup white chocolate chips
For the Glaze:
1/2 cup heavy cream
4 ounces milk chocolate, chopped
Directions:
For Cupcakes:
- Preheat the oven to 350 degrees
- Line 12- cup cupcake pans with cupcake liners
- In a bowl, whisk flour, baking soda and salt
- In a small saucepan heat milk but do not let it boil
- Pour cocoa powder in a bowl and then pour hot milk over it, whisk until smooth and let cool
- Whisk sugar, vegetable oil, egg and vanilla into the cocoa powder mix; whisk until smooth then add dry ingredients until everything is combined
- Add the white chocolate chips
- Pour mixture into cupcake tins and bake for 20 – 25 minutes
For Glaze:
- Heat the cream in a small saucepan or microwave
- Pour over chocolate in small bowl and let sit for 5 minutes then whisk until smooth, let cool
- Glaze cupcakes
Tips:
- When it comes time to pour the cupcake batter into the cupcake tins, use an ice cream scooper so it’s cleaner and easier
- Always let cupcakes cool before adding a frosting, icing or glaze because if the cupcakes are hot the icing will slide off
